Pot luck Recipes?

Hi all,

My DH is having a pot luck christmas lunch at work and they told his
department they have to bring the salads.  I'm sure someone is going to make
the usual pasta salad.  I'd like something original, different, or gourmet.
What are some good salad recipes to bring for pot luck?
