What USDA grade? What chemical? No idea. I looked at it once 6 months ago and tossed it back in the case. Asked the "meat expert" and was told it was a tenderizer of some sort for beef and pork. Chicken appeared to be untreated. Check on your next visit if you're interested. I won't be going back. It might be harmless, or it might not. But, I don't use my family as guinea pigs.
