It's not clear what you want and why chaos would be good, but you might 
look up Diana Dabby's papers on using chaos to create musical 
variations.  Very interesting.  Not circuits, but maybe it can give you 
an idea.  How do you propose to use the control (fingers or hands) in 
conjunction with the chaos?  

Just curious.
