Hi--

Can somebody point to some quality references on the role of
artificially hydrogenated vegetable oils (as in margarines) in blocking
arteries?

Something with a bibliography and references to textbooks and journal
articles, not just the claims of some health enthusiast.

Thanks.

You can scan PubMed for them . Mauger JF, Lichtenstein AH, Ausman LM, Jalbert SM, Jauhiainen M, Ehnholm C, Lamarche B.

Effect of different forms of dietary hydrogenated fats on LDL particle size.
Am J Clin Nutr. 2003 Sep;78(3):370-5.
PMID: 12936917 [PubMed - indexed for MEDLINE]

Nick would have quite a few more I am sure. The real problem lies on how to
interpret within any given individual and then how to manipulate them to
derive desired outcomes. These are all variables that need to be played out
and that usually requires further studies and time to clarify these things.
You need to be critical of food industry sponsored research or any research
for that matter.

Well that looks like an interesting cutting edge paper. Astounding to find that stick margarine is 26% trans FAs.

Would you be able to point me to a good review article that shows the big picture on hydrogenated oils in nutrition and hopefully in CA disease? Something from the past five years or so would be great.
