I was just wondering if I can get some opinions on this topic. I have been on a low carb diet during the week, and switch to high carbs on the weekend. One time I severely overdid my carbing up and I had a pretty bad case of jittering from the resulting insulin spike.
There are a number of studies/books on this "metabolic type" diet but I haven't seen any references to bad insulin reactions. Dr. Di Pasquale ( http://www.metabolicdiet.com/index.htm )even recommends a combination of high and low GI carbs to load.
Nevertheless, it did get me worried a bit. Can I trigger diabetes with this? Any opinions?

Why on earth would you eat low-carb during the week and then go high-carb on the weekend? Make up your mind. Do you want to be healthy or not? If you want to be healthy and thin go low-carb, if you want to be sick and fat go high-carb.
The jittering was probably the result of the sugar rush (blood glucose) and not necessarily the insulin.
The metabolic type concept is nonsense. The vast majority 98% of people metabolize the macro-nutrients in exactly the same ways bio-chemically speaking.
Can you trigger diabetes with this kind of eating? Let's just say that these regular weekly insulin spikes aren't doing your body any good. The weekend carb binges is doing some damage to your system. It is exposing your entire system to high levels of blood glucose which is known to kill the insulin receptors. It is also causing your pancreas to excrete unusually massive amounts of insulin. Eventually your pancreas will burn out and not be able to create any more insulin. Thus it will lead to diabetes eventually.
You must feel like crap for the entire weekend and for a few days after the weekend as your body tries to re-adjust itself to the carb binge. That alone should be enough incentive to smarten up and go low-carb full-time.
