Already mentioned are two main directions:

1) the green sheet and pencil method ... which should suit the
calculator you have, the method you use, and give a record of your
steps which you would then key into a COGO program or reconcile
manually.

2) the programmable calculator upgrade to an HP48GX (or whatever) with
software available to give you field results and a PC connection for
printouts and COGO.

It kind of depends on how much time you have and how much you value
your time, it seems to me. The results should be close, but #1 would
be more of a teaching experience. Just out of curiosity, how about
posting again when you tried #1 for a longer time or decided to change
methods?
