how many elements across wall in bending?

FEA software manuals recommend at least two layers of second order solids to
model bending in thin walls etc.. However, would just one layer be enough to
model bending of rectangular beam if all we want to model is stiffness, not
stresses? One layer still can model bending stiffness with linearly
distributed stress...

What do you think? Please comment.
