Re: Infrared sterilisation



Infra red will not sterilize or pasteurize except through the effects of
heat.  Ultraviolet light will sterilize provided that the item being
sterilized is transparent.  Otehrwise there will be only surface
sterilization (or pasteurization).  Ultraviolet light will destroy many
nutrients, e.g., thiamine, so this should be taken into account for food
use.
