Hi Ray, It's true avo's won't ripen on the tree. They are considered 'ripe' for picking when their dry matter content has reached a specific level. This has nothing to do with the softness of the flesh or flavour. They are called climacteric fruits and this means they ripen in the presence of ethylens-a gas hormone. If you want your avos to ripen quickly picl them off the tree and stick them in a bag with a banana or two, in about a day they will be perfect for eating. Ameera
