The word "extract" is generally used in the context of digitally "ripping" a given stream. This is accomplished in much less than "real time." However, audio streams on most DVD's are not mp3 or wav. So the resulting stream would need to subsequently be converted to what you desire. Nearly any DVD decrypter has the ability to "extract" audio tracks. In the context of the way you post your question, I suspect you may simply be interesting in "capturing" the audio track. This is easily done in a variety of ways as discussed by the previous poster. Depending on your system, you may even be able to record while playing your DVD. These methods are generally "real time" methods. (By "real time," I mean that a 10 minute audio track will take you 10 minutes to capture. This is in contrast to "extracting" an audio track which is generally accomplished in a fraction of the time.) Although there is an ultimate time savings in learning how to "extract," such time savings is lost in the learning process for the various software involved.
