You want to play RPS until one team reaches game point (in FIVB, say you have 24:18). Then you want to switch to SOS for BOTH teams, right? [If you switch for one team only, that makes the game unfair IMHO.] Now, if you keep just "trading sideouts", say, each team serves 6 times and all 12 sideouts are good, the new score would still be 24:18.
