As a spectator, I sometimes have that feeling. I wonder how a player who has jumped high to catch the disc can possibly always know where his/her foot came down first. Or whether the defender had contact prior to missing a catch. I'm not so sure that observers mean SOTG is dead. As a spectator, I would prefer that the call be made by an observer rather than always go back. I would also expect an observer to 'pass' on the call if they did not see the play clearly enough.
