During Christmas? It's not unusual for the cruise pukes to have 8 or more ships in port same day.


I was thinking more of the regular crowd. If we wanted a quiet
vacation during the holidays, how would Coz stack up against other
locations? (If they have cruise ships like Grand Cayman, Coz, etc.,
no problem - I would just avoid that area during the daytime.)


But other than that, how are bookings usually during holidays?

By regular crowd, I presume you mean the non-cruisers, which don't contribute to the reservation load on hotels/resorts. Like most any place south of English, it's red season and bookings (and prices) are up, but hotel/resort bookings now shouldn't be problematic. Separately booking a rental vehicle may be another matter, as by the time you get there, usually the worst of the lot is still parked - the day-timers (cruisers) are driving (wrecking) their day-long choices already. If you book a rental through a resort, their supply is better suited to their own clients. If you book without a rental, getting a taxi to go anywhere is next to impossible without a bribe, as the day-timers have them swamped.
