somewhere here, I read about this. You might look back a few thousand posts. It shouldn't be a problem. Take you children with you, decide which one you love the least and give him a drink. If it doesn't make him sick rack it, add some campden and go from there. No kids, relatives, irritating neighbors work as well. Ok, I have had my reality back. Was the carboy airlocked or open. I would be concerned that if it were not sealed somehow contaminants might be in there. However, I would rack it to a secondary, add some sulfite and let it sit for a while then bottle it. "LT" <[EMAIL PROTECTED]> wrote in message news:[EMAIL PROTECTED] I'm hoping I haven't ruined it but I made a batch of mead about a year ago and still have it in the plastic bucket. I racked it once, about a week into fermentation, then pretty much got busy and forgot about it. Didn't help that my wife put it in a closet while cleaning up, but it's still my fault. I'm going to rack it to my carboy today, leave it a couple weeks to make sure nothing happens, then bottle it, hopefully next weekend. Any chance that this could just work out as advance aging?
