I'm hoping I haven't ruined it but I made a batch of mead about a year ago and still have it in the plastic bucket. I racked it once, about a week into fermentation, then pretty much got busy and forgot about it. Didn't help that my wife put it in a closet while cleaning up, but it's still my fault. I'm going to rack it to my carboy today, leave it a couple weeks to make sure nothing happens, then bottle it, hopefully next weekend. Any chance that this could just work out as advance aging?
