Take some really clean 180-proof vodka, and fortify apple juice with it. Let it age and settle out for a while, and then make applejack out of it. Perhaps less congeners and methanol would be produced this way, because the alcohol wasn't produced by apple fermentation. The result might be a bit too sweet though -- it would be interesting.. maybe worth a try. LG
