Tow hitches for 97 Wrangler

I bet this has never been asked before!!!  yea right!

I have a 97 Wrangler and want to put a good hitch on the back.
I'm initially planning on towing a Utility Trailer about a 5 X 8 or 
5 X 10
I want to use it to transport things like plants, small trees, lumber
for fencing, dry wall sheets or 2 X 4s etc.....

I have a 2nd Home and want to use it for general purpose...

Now the question...
I've been looking at DrawTite  and see three different versions for
the 97 Wrangler.   I know the Cat III is the largest...  I was torn
between the Cat II and the Cat III

Although I have no plans to haul another car for example.... does it
hurt to be prepared and just go ahead and put the Cat III hitch on?

Any advice would be really appreciated...
