I think the quote actually went more like "all the women chanelling today could not MAKE a spoonful of saidar", the assumption being that actually having physical, liquid saidin or saidar is a very difficult thing to do, requiring both halves of the one power. The fact that the creators of the Eye died doing so seems to indicate that it's quite dangerous also. And when RJ talks about saidin or saidar, he almost always uses 'river' symbolism. I always pictured the flows of the power as being like water through hose. and considering all the crazy things Rand did taking on two forsaken as well as popping into Tarwin's gap to fry a number of shadowspawn, I'd be more surprised that he ONLY used that much saidin.
