If you're talking weeks, the fridge is fine. If it's several months or even years, use the freezer. Once frozen, film has to sit out for about 24 hours at room temperature to thaw out completely. If you use the rolls too cold, the base material can break apart and cause a camera stoppage (or even worse, tear off patches of emulsion that you won't know about until you see a print). But the best way to go is just order your stock against the leadtime (if there is any where you are) so it arrives a few weeks ahead of schedule so you have time to run any tests the DP thinks he needs.
