That's almost exactly how the Kotobukiya line of Front Mission toys worked. The limbs, heads and equipment were interchangeable (though the first and second series didn't fit perfectly), and I'm fairly sure every mech came in military green, and a few came in blue or grey, and there were a couple of red ones. Koto's Armored Core toys were also interchangeable, though they were designed with an eye more towards the individual character of each mech than the overall system.
