how about snails, any snails in the tank as they will eat holes in your
plants. If not then no doubt your Pleco and mollies would be the prime
suspects . Easy to grown plants depends on your light, substrate, co2 etc.
Too many variables but for low light, no co2 you can easily grow anubias,
java ferns, java moss and some cryptocorynes
