Once your tank completes the bio-cycle ammonia and nitrites will drop off to
zero.  However, nitrates will climb.  Nitrates will only decrease from water
changes, being consumed by plants or "live sand", or if you use some kind of
nitrate removal product in your filter.

Personally, I change the water.
