I suspect the answer may be in your first sentence. It's entirely possible that you set yourself up for failure on Monday night.
You are probably "under the gun" to finish preparing a program, but a full day Saturday followed by a Monday night is a lot of concentration and energy for singers who (presumably) have day jobs and, especially at this time of year, very busy Sundays. Your singers (and you) were probably simply exhausted.
I really like an occasional all-day rehearsal. It can do a lot for the people as well as for the music. But what happened on Sunday needs some time and space to be absorbed, contemplated and enjoyed individually before jumping back into the full group routine. So maybe its not possible in your circumstances, but I'd take a look at the rehearsal schedule itself as the "problem."
