Spin class ideas

I occasionally teach a spin class at the local gym (occasionally being
anywhere from 1 to 3 times/week.) We rotate instructors on a
more-or-less random basis; this works for us as it keeps the classes
from getting dull.
But.... I'm running out of ideas. Part of the problem is that I am a
roadie; I don't mind cranking it up as high as it will go, getting out
of the saddle, and staying there for 20 minutes. Needless to say, most
people in the class don't respond to that really well. I do try to vary
the routines as much as I can.
I don't like the often frantic activity of some spin classes - 30
seconds on, break, one minute on, break, 45 seconds on, break - all the
time changing what's going on. Some instructors change so often you
can't get a rhythm going at all.
I do like longer duration activities. Typically, I do 3-5 minutes sets,
and from 15-20 minutes back to back with no break, then a long break,
then another 15-20 minutes of workout.
So, any sources for spin instructor ideas? What routines work? What
doesn't? I've watched the Spinnervals tapes; most of those are far
beyond the ability of those in my classes (some of these people are
there because have to be - mandatory weight loss types - and the
motivation is low.) Heck, some of these people complain about the pace
during the warm up... When all they're doing is turning the pedals with
no resistance...
So, how do I motivate the un-motivated? And keep the interest of the
few who are there for a real workout?
