So why don't you go back to the dining/serving biz?

Because I am a single parent and waiting tables is all nights and weekends. Who wants to go to work just as their children are coming home for the night or the weekend? Not, me, I want to raise my child.
Besides, teaching rocks.
Life is not about making money or having things.
What I do today, teaching 7th and 8th grade English, is meaningful, challenging, brain scrambling, exasperating and extremely rewarding.
I love it.
Of course, I either paint houses or wait tables in the summer, the busiest and most lucrative season around here, to make up for the insult of a wage I make as a teacher during the rest of the year...
