It is possible abnormalities will appear in days 0-7, but unlikely.
The earliest sign of abnormality will probably appear in days 7-10, but
sometimes will not appear until later than day 10.

That would be written 'between 7 and 10 days after'

That is my understanding of how British English would use the phrase.
