I'm hardly stereotyping.  "Lots of" doesn't mean "all" or even "most".
You yourself have mentioned a Brazilian janitor who presumably is much
less educated than you are.  Most immigrants are Hispanics even if you
count only the legal ones, and most of them are relatively uneducated,
as were the Hmong refugees.

BTW, I would find it hard to stereotype based on you.  Your picture on
the website could almost be my twin, yet we have quite distinctive
ethnic backgrounds %^)
