Why do you care?  It is between him and the IRS if he reports all his
income.  How would a receipt in any way prove he is reporting all his
income.  You pay by check, not like there is no record of it, if you
care to give the IRS access to *your* banking info to demonstrate it.
What's it to you, Bub or Bubette (and I don't even know your Landlord,
I just don't like busybodies).
