For an introduction to AI, you could try 'Artificial Intelligence - A
modern approach', by Stuart Russel and Peter Norvig.
For an introduction to genetic algorithms, you could read:
1) An introduction to genetic algorithms, by Melanie Mitchell.
2) Genetic Algorithms in Search, Optimization & Machine Learning, by
David E. Goldberg. (This is the bible of Genetic Algorithms)
For an introduction to neural nets, you could try 'Neural Networks - A
comprehensive foundation', by Simon Haykin. (There is a load of maths in
there)
If you are interested in the application of genetic algorithms to
animation or games, have a look at 'AI techniques for Game programming',
by Mat Buckland.
