1. Do I need a good scanner (to be able to read old German fonts) or a basic scanner will do the job together with a good OCR?
You're going to need some OCR program that can be trained over and above what it knows already -- and as gothic letters are so different from Roman, you may want to disable 'pre-training' altogether.
FineReader can do that, but I have no idea if it does gothic letters well: they are quite different from roman.
